  Caution:

  "The bark, widely used in Europe, is not advisable in the West;  our trees and

   bushes contain larger amounts of both hydrocyanic acid and sambucine, a

   nauseating alkaloid found mostly in the bark and root as well as the fresh plant. 

   In fact it is advisable when making elderberry jam or wine to strain out the seeds,

  as they contain both substances."
